It helps to increase the volume of bread and preserve the freshness of products, gives the dough a rich aroma of rye bread and prevents the finished product from sugaring. The product is added to the dough 3-10% of the flour volume. All the sugar available in the recipe of the bakery product can be replaced with syrup at the rate of 1 kg of sugar = 1.25-1.5 kg of sugar syrup, while maintaining the identical sweetness.
